- 2 large watermelon slices
- 200 g primosale cheese
- 2 cucumbers
- 1 Tropea PGI red onion
- extra virgin olive oil
- salt and pepper
Peel and finely chop the onion, then soak for around 30 minutes in cold water, changing the water at least 3 times. Drain and dry with kitchen paper.
Remove the rind and seeds from the watermelon slices and cut into wedges. Wash the cucumbers, slice off and discard the tips, then chop into thin slices. Do not peel.
Finely dice the primosale cheese. Arrange all the ingredients on a serving plate, add a few mint leaves and season with oil, salt and pepper. Serve immediately.
