{"id":1598,"date":"2020-01-23T17:48:26","date_gmt":"2020-01-23T16:48:26","guid":{"rendered":"http:\/\/www.coopsole.it\/?p=1598"},"modified":"2020-01-23T17:48:26","modified_gmt":"2020-01-23T16:48:26","slug":"kohlrabi-puree-with-beetroot-sauce","status":"publish","type":"post","link":"https:\/\/www.coopsole.it\/en\/recipes\/kohlrabi-puree-with-beetroot-sauce\/","title":{"rendered":"Kohlrabi pur\u00e9e with beetroot sauce"},"content":{"rendered":"<h2>Ingredients<\/h2>\r\n<p>Serves 4<\/p>\r\n<!--more-->\r\n\r\n<ul>\r\n\t<li>1\/2 kohlrabi, cleaned<\/li>\r\n\r\n\t<li>1\/2 lemon<\/li>\r\n\r\n\t<li>1 beetroot<\/li>\r\n\r\n\t<li>3 tbsp extra virgin olive oil<\/li>\r\n\r\n\t<li>1\/2 aubergine<\/li>\r\n\r\n\t<li>100 ml vegetable stock<\/li>\r\n\r\n\t<li>vegetable oil for frying<\/li>\r\n\r\n\t<li>salt and pepper<\/li>\r\n\r\n\r\n<\/ul>\r\n\r\n<h2>Preparation<\/h2>\r\n\r\n<p>Dice the kohlrabi and steam, flavouring it with slices of lemon in the steamer basket. Drain and transfer to a blender, add a touch of vegetable stock, a pinch of pepper and blitz to obtain a pur\u00e9e. Leave to cool and set aside.<\/p>\r\n<p>Peel and slice the beetroot, then steam; leave to cool and blitz with salt, oil and pepper.  \r\nPeel the aubergine with a potato peeler and chop the peel into thin strips; fry the strips in hot oil and blot on kitchen paper after 1 minute. <\/p>\r\n<p>Spoon the kohlrabi pur\u00e9e into soup dishes, drizzle with rapeseed oil and finish with the crispy aubergines.
