{"id":1593,"date":"2020-01-23T17:44:20","date_gmt":"2020-01-23T16:44:20","guid":{"rendered":"http:\/\/www.coopsole.it\/?p=1593"},"modified":"2020-01-23T17:44:20","modified_gmt":"2020-01-23T16:44:20","slug":"fried-pumpkin-with-kohlrabi-savoy-cabbage-and-potato-cream","status":"publish","type":"post","link":"https:\/\/www.coopsole.it\/en\/recipes\/fried-pumpkin-with-kohlrabi-savoy-cabbage-and-potato-cream\/","title":{"rendered":"Fried pumpkin with kohlrabi, Savoy cabbage and potato cream"},"content":{"rendered":"<h2>Ingredients<\/h2>\r\n<p>Serves 4<\/p>\r\n<!--more-->\r\n\r\n<ul>\r\n\t<li>1\/4 green-skinned pumpkin<\/li>\r\n\r\n\t<li>vegetable oil for frying<\/li>\r\n<\/ul>\r\n\r\n<p>For the cream<\/p>\r\n<ul>\r\n\t<li>1\/4 Savoy cabbage <\/li>\r\n\r\n\t<li>100 g potatoes<\/li>\r\n\r\n\t<li>120 g kohlrabi, cleaned<\/li>\r\n\r\n\t<li>2 cloves garlic<\/li>\r\n\r\n\t<li>3 tbsp extra virgin <\/li>\r\n\r\n\t<li>olive oil<\/li>\r\n\r\n\t<li>300 ml vegetable stock<\/li>\r\n\r\n\t<li>chives<\/li>\r\n\r\n\t<li>salt and pepper<\/li>\r\n\r\n\r\n<\/ul>\r\n\r\n\r\n\r\n<h2>Preparation<\/h2>\r\n\r\n<p> Peel the potatoes and chop into small thin pieces; clean the Savoy cabbage and chop into thin julienne strips. Dice the kohlrabi.  Crush the garlic and brown in a saucepan with the olive oil, add the Savoy cabbage, the potatoes and the kohlrabi and season with salt and pepper.<\/p>\r\n<p>After 2 minutes, pour over the hot stock and add a sprinkling of salt. Simmer until the vegetables are almost loosing consistency and the stock has reduced; blitz the mixture in a blender and season with salt and pepper to taste. Then place in the fridge to cool for around 20 minutes.<\/p>\r\n<p>Meanwhile, remove the green rind from the pumpkin and chop the flesh into thin strips.<br>\r\nHeat the vegetable oil in a frying pan and fry the pumpkin for 1 minute. Blot well on kitchen paper.<\/p>\r\n<p>Moisten 2 tablespoons and use to create quenelles of the potato, Savoy cabbage and kohlrabi cream; then arrange on the plates and cover with the nice and crispy pumpkin.
