{"id":1503,"date":"2020-01-22T16:50:13","date_gmt":"2020-01-22T15:50:13","guid":{"rendered":"http:\/\/www.coopsole.it\/?p=1503"},"modified":"2020-01-22T16:50:13","modified_gmt":"2020-01-22T15:50:13","slug":"apple-and-salted-caramel-tartlets","status":"publish","type":"post","link":"https:\/\/www.coopsole.it\/en\/recipes\/apple-and-salted-caramel-tartlets\/","title":{"rendered":"Apple and salted caramel tartlets"},"content":{"rendered":"<h2>Ingredients<\/h2>\r\n<p>Serves 4 <\/p>\r\n<!--more-->\r\n\r\n<ul>\r\n\t<li>1 roll puff pastry <\/li>\r\n\r\n\t<li>2 Annurca apples<\/li>\r\n\r\n\t<li>sliced almonds  <\/li>\r\n\r\n\t<li>unrefined cane sugar <\/li>\r\n<\/ul>\r\n\r\n<p>For the salted caramel<\/p>\r\n<ul>\r\n\t<li>125 ml fresh cream  <\/li>\r\n\r\n\t<li>25 g butter <\/li>\r\n\r\n\t<li>115 g caster sugar <\/li>\r\n\r\n\t<li>60 ml water  <\/li>\r\n\r\n\t<li>1\/2 tsp \u201cfleur de sel\u201d sea salt<\/li>\r\n\r\n\r\n\r\n<\/ul>\r\n\r\n<h2>Preparation<\/h2>\r\n\r\n<p> Prepare the caramel: pour the butter and cream into a small saucepan and bring to the boil over a medium heat. Remove from the heat and leave to cool. Place the sugar and water together in another small saucepan and cook over a low heat, stirring until the sugar has dissolved. Boil for around 10-12 minutes or until it has reached a temperature of 150\u00b0C and the caramel has turned a dark amber colour. Remove from the heat and immediately add the salt and the cream and butter mix all at once.<\/p>\r\n<p>Mix quickly with a whisk and place back over a medium heat for about another 2 minutes, stirring, until the consistency is that of a creamy sauce. Remove from the heat and leave to cool completely, stirring from time to time. Unroll the puff pastry and cut out lots of little discs using a pastry cutter with a 6-cm diameter. Position on a baking tray lined with baking paper and prick with a fork.<\/p>\r\n<p>Wash the apples and thinly slice with a mandoline, then arrange in layers on top of the pastry discs, leaving a gap of about 1\/2 cm around the edges. Sprinkle with the sugar and top with the almonds. Bake for about 12 minutes at 190\u00b0C until the pastry is golden and puffy.
