{"id":1479,"date":"2020-01-22T16:27:50","date_gmt":"2020-01-22T15:27:50","guid":{"rendered":"http:\/\/www.coopsole.it\/?p=1479"},"modified":"2020-01-22T16:27:50","modified_gmt":"2020-01-22T15:27:50","slug":"lemon-and-poppy-seed-crepes-with-cheese-and-lemon-curd","status":"publish","type":"post","link":"https:\/\/www.coopsole.it\/en\/recipes\/lemon-and-poppy-seed-crepes-with-cheese-and-lemon-curd\/","title":{"rendered":"Lemon and poppy seed cr\u00eapes with cheese and lemon curd"},"content":{"rendered":"<h2>Ingredients<\/h2>\r\n<p>Serves 4 <\/p>\r\n<!--more-->\r\n\r\n<ul>\r\n\t<li>220 ml milk <\/li>\r\n\r\n\t<li>30 g melted butter + butter for greasing <\/li>\r\n\r\n\t<li>100 g type \u201c00\u201d white flour <\/li>\r\n\r\n\t<li>3 tbsp sugar <\/li>\r\n\r\n\t<li>2 eggs <\/li>\r\n\r\n\t<li>2 tsp poppy seeds <\/li>\r\n\r\n\t<li>1 untreated, unwaxed lemon <\/li>\r\n\r\n\t<li>1\/2 vanilla pod <\/li>\r\n\r\n\t<li>salt <\/li>\r\n\r\n<\/ul>\r\n\r\n<p>For the filling <\/p>\r\n<ul>\r\n\t<li>300 g fresh cheese spread <\/li>\r\n\r\n\t<li>200 g blueberries <\/li>\r\n\r\n\t<li>lemon curd <\/li>\r\n\r\n\t<li>1 vanilla pod<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n\r\n<h2>Preparation<\/h2>\r\n\r\n<p> Prepare the cr\u00eapes by whisking together the eggs, milk, sieved flour, sugar, the seeds from the vanilla pod, the poppy seeds, 1 teaspoon of grated lemon zest and a pinch of salt. Add the melted butter at room temperature and amalgamate to obtain a smooth, homogeneous batter. Cover with clingfilm and leave to rest at room temperature for 30 minutes. <\/p>\r\n\r\n<p>In a bowl, prepare the filling by mixing the cheese with the vanilla seeds to make it creamy, then keep in a cool place. Grease a small non-stick frying pan with a little butter, dab gently with baking paper and add a small ladleful of batter. Cook the cr\u00eape quickly on both sides, taking care not to burn it or dry it out too much. Continue until no more ingredients are left, piling the cr\u00eapes up on a plate.
