Sweet-and-sour plum, red pepper and apple sauce


Makes 2 jars

  • 300 g red peppers
  • 300 g red plums
  • 1 apple
  • 4 tbsp cane sugar
  • 4 tbsp apple cider vinegar
  • extra virgin olive oil
  • pepper


Clean the peppers and dice. Peel the apple and chop into small pieces. Clean and chop the plums too, leaving the skin intact.
Place all the ingredients together in a saucepan with 3-4 tablespoons of oil and a generous grinding of pepper and cook for 5 minutes.
Add the cane sugar and vinegar, cover with a lid and continue cooking for another 30 minutes.
Allow to cool and use this sauce to accompany the aged cheese, flavouring with more pepper to taste.
