Rocket, melon, mini mozzarella and speck salad


Serves 4

  • 200 g mini mozzarella balls
  • balsamic vinegar
  • 100 g rocket
  • 130 g sliced speck
  • 1 melon
  • extra virgin olive oil
  • salt and pepper


Cut the melon in half and scoop out the seeds from the middle with a spoon. Using a melon baller, scoop out lots of little balls from the flesh and set aside.

Place the rocket in a bowl, dress with a drizzle of oil, salt, pepper and a few drops of balsamic vinegar.

Add the mini mozzarella balls and melon balls, then mix. Divide the salad between the plates and finish with a few roughly-chopped thin speck slices.
