Mini green bean rolls with Parmesan and bacon

Ingredients

Makes 12 mini rolls

  • 12-15 thin slices bacon
  • 300 g fresh green beans
  • grated Parmigiano Reggiano (Parmesan cheese)
  • extra virgin olive oil
  • salt and pepper

Preparation

Trim the green beans, attempting to chop them all the same length. Cook in lightly salted boiling water for 8 minutes, then drain and allow to cool. Season with a drizzle of oil, salt, pepper and a generous sprinkling of Parmesan.

Make little piles of 7-8 green beans each, rolling a slice of bacon around the middle to secure the beans, then arrange the mini rolls on a baking tray lined with baking paper.

Season with a drizzle of oil, salt and pepper and bake in the oven for 10 minutes at 200°C, turning every now and again until the bacon is crispy and golden and the green beans a little roasted at the tips. Remove from the oven and serve, sprinkling with more Parmesan and pepper and a touch of chilli powder to taste.
