Melon, watermelon and raspberry mojito fruit salad


Serves 4

  • 1 baby watermelon
  • 1 melon
  • 300 g fresh raspberries
  • 3 tbsp cane sugar
  • 2 juicy limes
  • fresh mint
  • about 1.5 tbsp white rum


Using a melon baller, scoop out lots of little balls from the flesh of the watermelon and melon and place together in a bowl. Wash the raspberries thoroughly and pat dry, then add to the other fruit.

Flavour the fruit with the rum, the cane sugar, the juice of 1 and a half limes and a few finely chopped small mint leaves. Stir gently so as not to ruin the raspberries, then leave to macerate in the fridge for around 45 minutes, stirring from time to time.

Serve your fruit salad in glasses, decorating with a few thin slices of the half lime set aside earlier and a few more small mint leaves. Use a tablespoon to divide the mojito juice among the glasses. Serve your fruit salad nice and cold from the fridge.
