Mango, cucumber and melon salad


Serves 4

  • 2 mangoes
  • 1 cucumber
  • 1/2 melon
  • 1 beef tomato
  • 4 tbsp extra virgin olive oil
  • fresh mint
  • lemon juice


Cut the mangoes in half, peel and slice. Remove the melon peel and seeds and chop the flesh into very thin segments. Peel the cucumber and chop into rounds. Wash and slice the tomato.
Place all the ingredients together in a salad bowl and season with an oil and lemon juice emulsion.
