Mango and turkey salad with herbs


Serves 4

  • 150 g mixed leaves
  • 1/2 kg turkey breast
  • 1 large ripe mango
  • 5 radishes
  • 1 clove garlic
  • rosemary
  • thyme
  • marjoram
  • extra virgin olive oil
  • salt and pepper


Chop the herbs, with the leaves removed, with the garlic and place all together in a bowl with oil, salt and pepper. Thinly slice the turkey breast, place in the bowl, cover with cling film and leave to marinate for about 1 hour in the fridge. Peel and dice the mango, mix with the salad leaves and thinly sliced radishes and season with oil and salt. Remove the turkey from the marinade and drain. Grill on both sides on a red-hot cast iron grill.
Finish off the salad with the warm turkey chopped into pieces.
