Courgette, baby spinach, raspberry and feta salad


Serves 4

  • 2 medium courgettes
  • 125 g feta
  • 125 g raspberries
  • 100 g baby spinach
  • 5 mint leaves
  • extra virgin olive oil
  • salt and pepper


Dice the feta and place in a bowl. Season with 2 tablespoons of oil and the mint, chopped. Leave to flavour while you prepare the other ingredients. Wash the courgettes and peel into thin ribbons using a potato peeler.

Place the courgette ribbons, feta, baby spinach and raspberries in a large salad bowl. Dress your salad with an emulsion made with 2 tablespoons of oil, 1 tablespoon of white wine vinegar, salt and pepper. Mix and serve.
