Chicken bites with peppers and basmati rice


Serves 4

  • 1/2 kg mini chicken pieces
  • 200 g basmati rice, boiled
  • 1 small red pepper
  • 1 small yellow pepper
  • 3 cm fresh ginger root
  • 1 tbsp honey
  • 60 ml soy sauce
  • type “00” white flour
  • 1 clove garlic
  • extra virgin olive oil
  • fresh thyme
  • salt and pepper


Coat the mini chicken pieces in flour. In a large frying pan, simmer the crushed garlic with the grated ginger and a drizzle of oil to take on the flavour. Add the chicken and brown evenly, turning often. Set aside.

Place the cleaned peppers, chopped into strips, in the same frying pan. Add the soy sauce, 2 tablespoons of water, the honey and thyme. Season with salt and pepper then add the chicken once the peppers are cooked. Allow to simmer briefly to absorb the flavours and serve with the basmati rice.
